Brakes launches new Sysco Premium Deep Fill Pies

Foodservice wholesaler Brakes has launched a new range of Sysco Premium Deep Fill Pies, created for clubs and hospitality venues who want craft quality, consistency and depth of flavour without the labour intensity of scratch cooking.

Each pie is built around a butter enriched shortcrust pastry case and a deep fill format for a generous, fully packed slice with no void between the filling and the pastry lid. The lids are hand finished with distinctive toppings such as cracked black pepper or rosemary, helping busy kitchens quickly identify varieties during service.

Ahead of launch, the full range was entered into the British Pie Awards and achieved outstanding recognition across multiple categories. The Beef Bourguignon Deep Fill Shortcrust Pie was awarded Class Winner and Gold, while the Chicken Ham Hock and Leek Pie and the Venison and Port Pie were both Highly Commended Silver award winners, while the Chicken Leek and Wholegrain Mustard Pie also achieved Silver. The Barber’s Cheddar Potato and Onion vegetarian pie was awarded Bronze.

To deliver a richer, more homemade flavour profile, the fillings are produced in small oven cooked batches rather than the large kettles used in most large-scale production. This approach provides quality and consistency while retaining the depth and character of a slower, more traditional cook, says the company, with the fillings are slow cooked to ensure tenderness and a fully developed flavour.
