NEW, RETRO STYLE SODA SIPHON

This retro-style soda siphon from Cream Supplies captures the essence of vintage design visually, but provides contemporary functionality, according to the company.

The siphon is made from heavy glass, encased in steel mesh. A rubber base protects surfaces and also prevents the siphon from slipping.

It is easy to use and can either be filled with tap water or still mineral water up to the one litre red marker line and then charged with a CO2 cartridge.

Water will retain its fizz for several days.

DEDICATED DESSERT STATION

Cheftools, sole UK importer and master distributor of the Pacojet food processor, has joined with specialist refrigeration company, Adande Refrigeration, to create a dedicated dessert station for Pacojet. The new system brings together the Pacojet machine and a choice of freezer drawer units from Adande.

Pacojet produces desserts and savoury dishes with an intensity of taste, a depth of true colour and a smooth texture that cannot be achieved by manual processing, according to the company.

Now Pacojet and Adande have joined together to create a tailor-made dessert preparation station. This means that club caterers can use the Pacojet with a freezer and all necessary pacotizing beakers within easy reach, saving time and avoiding distractions. Each freezer drawer is capable of temperatures down to -20°C, which is required for Pacotizing. Drawers can hold as many as 20 beakers each. The Adande two-drawer unit measures 1100mm in width, with a generous depth of 700mm forming a perfect work surface for the Pacojet. The unit may be specified with feet or castors.

Clubs can choose any Adande one or two drawer unit and the Pacojet ‘Super’, which includes 22 beakers, a titanium hardened gold blade together with a standard blade and full cleaning kit.

The two-drawer dessert station is offered at £6455 + VAT, which represents an introductory discount of £500 off the standard list price. GENTLE ACTION UNDERCOUNTER GLASSWASHER

A new undercounter glasswasher has been added to Nelson’s Advantage range. The Advantage undercounter glasswasher promises perfect results on all types of glasses, keeping them looking as good as new, even after multiple washes.

It features a ‘fine crystal’ option that can be selected at the touch of a button, and which will reduce wash time by 30 seconds and lower rinse water temperature to 70°C (instead of the usual 85°C) thus preventing the conditions which can so easily make fine glassware become opaque. This option also delivers the initial water jet at a reduced pressure to avoid breaking and chipping the most delicate items, before gradually increasing to normal washing force.

A built in water softener removes calcium deposits which can potentially reduce the efficiency of the heating elements and increase energy consumption. It has the added advantage of reducing detergent and rinse aid costs by up to 70% since consumption of these agents depends largely on the hardness of the water.

The Advantage glasswasher is exceptionally energy efficient and has a patented heat recovery system that draws a large amount of heat from waste water and uses it to heat the new wash water. Its high level of insulation prevents heat escaping and also makes it the quietest machine in its class, operating at just 50DbA.

Water usage, too, is minimised. The Advantage glasswasher has a tank capacity of just 11 litres. Only 3 litres (the minimum amount necessary to ensure good results) is replaced at the start of every new cycle. The wash power of the reduced amount of water is maximised by the superior wash arm which has been calibrated to rotate exceptionally fast and produce strategically aimed and wide reaching water jets.

The patent pending, three-stage filter system is exceptionally easy to access for cleaning, and efficiently traps any debris and hold it, without danger of it re-entering the wash tank. The innovative and user friendly display panel allows the operator to select the desired features and manage the dispensing of the detergent and rinse aid. In the event of malfunction, a self diagnostic facility helps the operator to troubleshoot. An infra red communications port, meanwhile, holds the machine’s operational data which can be used for monitoring performance and installing updates.

Finally, at the end of each cycle, the machine self cleans meaning that no operator cleaning is ever required.

OUTDOOR COOKING: FOIL PROOF

Outdoor cooking can be a difficult and messy task, but using aluminium foil reduces the stress and mess, and improves the quality of the food, according to Wrapex, producer of Prowrap.

“However standard aluminium foil can be brittle and easily tear, especially when being used on the BBQ,” says a spokesman for the company. “Wrapex’s Prowrap premium foil range is strong and thick, to prevent these sort of problems.”

When wrapped in Wrapex’s Prowrap premium foil, food is kept moist and the flavours blend together. This is especially useful when cooking delicate foods such as fish, says the company: “Just place the fish with herbs and any other ingredients on a piece of foil large enough to make a parcel and place it on the BBQ. The result is mouth-watering, moist fish ready to be served up.”

Premium aluminium foil can also be used to bake potatoes. By wrapping the potatoes in the foil they can be directly placed onto the coals or grill, occasionally being turned over. Because the foil is strong there’s no need to worry about it splitting. It can, therefore, be left slowly cooking on the BBQ until the inside is fluffy.

Prowrap premium foil comes in a sturdy dispensing pack and is available as either 300mm x 75mm or 450mm x 75mm rolls and either extra or ultra thick. ICE DOWN UNDER

Classeq’s redesigned Ice-O-Matic ICEU225 is a completely self-contained ice maker with stainless steel top panels and convenient slide-away doors.

With a 610mm square footprint and a height of just 911mm, it has a storage bin with a 34kg capacity, fits neatly under standard counters and makes up to 96kg of cube ice per day.

Built for continuous ice production day in day out, the ICEU225 has an assisted harvest system to push ice into the storage bin rather than waiting for gravity to do the job. The evaporator combines a copper core for superior conductivity with electroless nickel plating to resist the damaging effects of ice and water, prolonging the overall life of the machine.

To ensure crystal clear cubes, a built-in antimicrobial protection prevents the growth of bacteria and slime within the machine. For further purity there is an optional water filtration system to remove unpleasant tastes and odours as well as to protect against limescale.

VARIOPOWER - CLEANER GLASSES AND DISHES, FEWER BREAKAGES, LOWER COSTS

VarioPower is the latest clever warewasher technology from Winterhalter. It not only saves energy and water, but also protects delicate dishes and glasses and gives better results, says the company.

As its name suggests, VarioPower varies the water pressure, regulating it to match the products being washed. It is fitted as standard on all Winterhalter’s UC Series of undercounter dish, glass and utensil washers.

For fine china or delicate glasses, or where soiling is minimal, VarioPower lowers the water pressure. This in turn reduces energy and water consumption, minimising costs. It also lengthens the life of fragile table and glassware. For heavier soiling, or when cleaning more robust dishes and glasses, the pressure is increased, avoiding the need to rewash dirtier items and thus, again, saving resources.

VarioPower also automatically adjusts all the other variables - such as detergent and rinse aid - to ensure that results are always perfect, whatever the setting. “The technology ensures that champagne flutes get sparkling clean under low pressure, just as heavy-duty beer mugs do on high pressure,” says Paul Crowley, marketing manager of Winterhalter.

Choosing the appropriate VarioPower setting is simply a matter of tapping the appropriate graphic on the warewasher’s touchscreen panel.

UC machines are available in four different sizes, small, medium, large and extra large, and four different configurations, one each for dishes, glasses and cutlery or utensils, plus the multi-purpose bistro version, which can wash glasses and dishes at the same time.

The glasswashers can process up to 48 racks per hour, with racks ranging in size from 400x400mm in the small model to 500x540mm in the extra large. The dishwashers and Bistro machines handle up to 40 racks per hour, the cutlery or utensils washers up to 11.

The UC Series is part of Winterhalter’s IRT (Intelligent Resource Technology) project, aimed at reducing the consumption of water, power and chemicals in warewashing. The range is available through authorised dealers.
